GILLES & GRACE CAFE products are defined by what goes into them. No fillers, no artificial flavors, no shortcuts. Here's a closer look at the key ingredients that make our sauces, creams, and bars taste the way they do.
Ingredient sourcing is where flavor begins. Before a single jar is filled, we spend weeks — sometimes months — finding the right supplier for a core ingredient. We visit farms where we can. We taste dozens of samples. We reject batches that don't meet our standards. This obsessive approach to sourcing is what separates GILLES & GRACE CAFE from brands that treat ingredients as interchangeable commodities.
We believe that transparency is part of quality. When you read our labels, you should be able to picture where each ingredient came from. Alphonso mango from Indian orchards at peak season. Habanero peppers sourced from small farms in Oaxaca and the Caribbean. Single-origin cacao from cooperatives in Ecuador we've shaken hands with. These aren't marketing stories — they're supply chain decisions that directly affect how our products taste.
We also make deliberate decisions about what we leave out. No xanthan gum to stabilize our sauces — we achieve texture through proper emulsification and reduction. No artificial sweeteners in our creams — sweetness comes from fruit, caramelized sugars, and real cacao. No synthetic preservatives — acidity, salt, and proper handling do that job naturally. Every ingredient that isn't on the label is an ingredient we chose not to use.
Alphonso Mango

The king of mangoes. Prized for its deep sweetness, low fiber, and intense floral aroma. We source only during peak season to capture maximum flavor in every bottle.
Habanero Pepper
Mexico & Caribbean
Fruity, floral, and ferociously hot. Habanero brings a brightness that most chili varieties can't match. We use it fresh and fermented for layered complexity.
Single-Origin Cacao
Ecuador & Ghana
Our chocolate bars start with cacao sourced directly from cooperatives we've visited. Terroir matters in chocolate just as much as wine — every origin tastes different.
Fleur de Sel
France
Hand-harvested sea salt with a delicate crunch and mineral finish. A pinch transforms sweet creams and caramel spreads from good to unforgettable.
Fresh Lime
Mexico
Acid is the backbone of any good hot sauce. Fresh lime juice brightens every batch, balancing sweetness and heat while extending natural shelf life.
Coconut Cream
Southeast Asia
Cold-pressed and minimally processed. We use full-fat coconut cream for the texture and richness it brings to our tropical dessert spreads.
Ingredients also change seasonally. Our Mango Habanero sauce tastes slightly different in June than it does in October, because the mango crop is different. We consider this a feature, not a bug. Food made with real ingredients reflects the reality of agriculture — and that's something to celebrate, not standardize away.
Every new product we develop starts with an ingredient we've discovered and fallen in love with. A rare pepper from a new farm. A cacao variety with unusual notes. A fruit we've never used before.
